Mix breadcrumbs, flour onion, Parmesan cheese and egg together. Add the nutmeg, black pepper, and salt. To the well-combined mixture, fold in the shredded zucchini.
Heat olive oil in a pan to medium high. With a portion scoop, place zucchini mixture in the heated pan and cook the patties until crispy, about 4 minutes on each side.
The fritters can be kept warm in the oven until ready to serve. Garnish with sour cream or yogurt.
