Sushi Rice


Sushi rice is made from short grain rice and is very sticky once prepared. This recipe is based on Alton Brown’s with a few added tips for good measure! Using the Sushi Roller sold at NOBLE, making sushi is easy and various recipes are included with the Roller.


Place the measured rice in a bowl and cover with water. Using your hands, gently swirl and lift the rice to cleanse it. Pour out the milky water and repeat 2 additional times or until the water appears to be fairly clear.

Place the washed rice and 2 cups of water into a medium saucepan and place over high heat. Bring to a boil, uncovered, and then reduce the heat to the lowest setting and cover. Allow to cook for 15 minutes (do not stir) and then remove from the heat and let stand covered for an additional 10 minutes.

Combine the rice vinegar, sugar and kosher salt in a small sauce pan and heat on the stove until sugar and salt dissolve. (Vinegar, sugar and salt mixture can be placed in a microwave safe bowl and heated on high for 30-45 seconds if you prefer). Transfer the cooked rice to a large wooden, ceramic or glass mixing bowl and add the vinegar mixture. Fold thoroughly to combine and coat each grain with the mixture. Allow to cool to room temperature before using to make sushi.

Helpful Hint: Wear kitchen gloves wiped with a little mayonnaise to keep sushi rice from sticking to your hands while making sushi rolls.
