Prepare the pizza dough according to the package directions. Once dough has rested, roll into a rectangle and brush with olive oil. Sautee sliced onions in olive oil until caramelized (about 5-7 minutes on medium high heat with frequent stirring to prevent burning). Rough chop marinated olives, artichokes and red peppers.
Spread onion over the unbaked dough evenly and follow with the olive, artichoke and red pepper mixture. Crumble ½ cup feta cheese across the top.
Bake focaccia on an oiled or parchment lined pan at 425 degrees for 15-20 minutes or until dough is crispy. Underside of the crust will be lightly browned.
Helpful Hint: Pizza dough can be mixed by hand or with the dough hook on the KitchenAid stand mixer. Add two additional tablespoons of water in the dough preparation to aid in mixing. Once the dough has rested, flour the counter and pat both sides of the dough ball in the flour. This will result in a dough that is a perfect texture and easy to roll out.
