Roasted Parsnips and Carrots



Preheat oven to 450 degrees F.

Combine parsnips and carrots in a bowl and coat with olive oil. Season with salt and pepper and spread evenly on a parchment paper lined baking pan/cookie sheet. Roast in a preheated oven for 15-20 minutes or until vegetables are tender. Drizzle with honey before serving and garnish with fresh parsley.
