Preheat oven to 350 degrees F. In a large bowl, cream butter and brown sugar, then add egg maple syrup and vanilla, mixing until all of the ingredients are blended. With a whisk, combine the flour, baking soda and salt in a separate bowl and then add to the creamed mixture, stirring until well blended.
Shape dough into 1” balls and roll in sugar. Place on parchment lined cookie sheets approximately 2” apart, slightly flattening the dough balls. Bake 8-10 minutes or until a light golden appearance appears on the bottom of the cookie when checked. Remove and allow to cool.
