In a shallow bowl, combine ¼ cup each of the lime juice and oil and the jalapeno slices. Rub chicken with salt and pepper and add to the marinade. Add a dash of tequila and marinate for at least ½ hour.
In a medium bowl, combine the citrus fruit, scallions, tomatoes, remaining lime juice and oil, zests, salt and pepper, diced jalapeno, cilantro, tomatillos and remaining tequila. Set aside.
Remove chicken from the marinade and cook on a hot grill for approximately 5 minutes on each side or until cooked through. Remove from the grill and allow to stand 5 minutes.
Divide greens among four plates or use one platter for plating at the table. Slice the chicken and arrange on top of the green and spoon the salsa over the chicken. Serve immediately.
