In a large skillet, saute mushrooms in olive oil until tender and remove from heat. Combine the rest of the ingredients in a large bowl or container, add the mushrooms with the oil and chill at least 4 hours to blend the flavors. Serve with a dollop of sour cream or plain Greek yogurt.
