Combine orange juice, lemon juice, soy sauce, coriander, ginger and honey in a small bowl. Whisk in oil and season to taste with salt and pepper.
Fill a large pot with water and bring it to boil. Add 1 teaspoon of salt and French green beans, allowing to cook until beans are tender (approximately 2 minutes). Drain the beans and then place in ice water to halt the cooking process.
Slice tomatoes in to ¾ in slices and then cut slices into chunks. Drain the beans and place in a bowl with the tomatoes and arugula. Season with salt and pepper, toss with the dressing and serve.
